I wanna Nightmare... the horse that is.

It's part of the NWN horse palette. Don't know if you currently have one that can be obtained. If so... I didn't see it on the horse seller (though he does have a unicorn @_@)

If I need to RP it I will. Karena has Planar Binding afterall.

It is integrated fully into the horse system, but is not available from the Horse Wrangler. You'll need to speak to a DM, and I can give them the codes to change your horse for you.

P.S. The unicorn is just a joke. You can't actually buy one.
